A leading figure in Bordeaux (F), Cabernet Sauvignon is one of the most widely used grape varieties in the world. The unexpected discovery of his parentage in 1997 caused a stir: it is a natural cross between Cabernet Franc and Sauvignon Blanc, a cross which probably took place in Gironde before the 18th century. It is therefore a half-brother of Merlot and Carmenère. In Switzerland, this grape variety sensitive to fungal diseases is cultivated mainly to make Bordeaux blends (with Cabernet Franc and Merlot), bringing notes of blackcurrant and blackberries.
