Completer

Old grape variety from Graubünden (Switzerland) where it was already mentioned in 1321 in Malans near Chur, Completer takes its name from completorium, the evening service of Benedictine monks who were then allowed to drink a glass in silence. In Haut-Valais, the Completer gave birth to Lafnetscha with which it has often been confused. A late variety, benefiting from foehn, the Completer produces powerful and rich wines, whose considerable natural acidity allows great aging potential. It had almost disappeared in the 1960s, and today rare Completer vineyards remain in Switzerland, mainly in Grisons, but also in Zurich and, most recently, in Valais.

Aroma Potential

Gives a fairly powerful white wine for laying down, pale yellow in color, with a good balance of sugar and acidity. Aromas of citrus fruits, quince, acacia honey, mirabelle plum, hazelnut, peach, pear, apple, elderberry.
