Nebbiolo

Originally from Piedmont (I) where it produces the great wines of Barolo and Barbaresco, Nebbiolo is one of the oldest grape varieties in Europe, mentioned for the first time in 1266. Its name comes from nebbia = fog, in reference to the down that covers its berries. The DNA test showed that it gave birth to several grape varieties from northern Italy, such as Freisa and Nebbiolo Rosé. In Switzerland, this very late variety was planted in the 1970s, but its presence is anecdotal and its wines are very tannic and full-bodied.

Aroma Potential

Gives a wine of very high quality with very often very good acidity, moderately colored light garnet, rich in alcohol with heavy and astringent tannins predisposing it to optimal aging. The total polyphenols are low but of good quality. It releases its anthocyanins very easily, but the latter oxidize easily.Aromas of anise, burnt, cocoa, cherry, mushroom, red fruit jam, leather, spices, smoked, tar, iris, blackberry, spicy notes, oregano, rose petals, ripe plum, sloe, liquorice, wilted rose, undergrowth, tea, truffle, violet.
